THE ART OF PEPPER SAUCE MAKING
What enables Orisirisi Spice of Life to produce such unique flavors of pepper sauces is the fact that I grew up in Trinidad and Tobago. You see, growing up there as a boy, my life was full of adventure. Especially on the hot summer days when school was out for vacation.
In the summer, fruits were of an abundance and of course, knowing this your mom would use it to her best advantage. She would argue the point that “The Maid” is on vacation 😂 and you would have to fend for yourself. In other words, she was not going to be sweating in the kitchen over a hot stove while schools was on vacation. It was like The Parents’ Playbook, and my friends and I adapted.
At this time no fruits were safe 😋- mangoes, pineapples, sugar apples, guavas, papaya, plums, each one more exotic than the next. From eating them ripe to using the green ones to make a quick pickle locally known as “chow”- incorporating the hot peppers, garlic, onions, lime juice, salt, and various herbs with the green fruits until you found the perfect balance of heat and flavor. Spicy flavorful foods in Trinidad and Tobago is like religion, everyone indulges, even down to the chows.
Knowing the art of chow making enables us to make such unique flavors of pepper sauces. Our goal was to create a product for everyone to enjoy, from the pepper sauce connoisseurs who like it hot, and also, to introduce a milder flavorful pepper sauce for the novices who can't handle the heat.
